Pan Blackened Catfish

Cajun Style

4 Medium Sized Catfish
2 Tbsp. Sweet Paprika
2 1/2 Tbsp. Salt
1 tsp. Onion powder
1 1/2 tsp. Cayenne Pepper
2 tsp. Lemon pepper
1tsp Thyme leaves
1 1/2 tsp. Basil leaves
1/2 Stick Butter
1/4 cup Olive oil
The trick to this recipe is to use a Cast Iorn Frying Pan!!
Heat cast iorn pan about 10 min.
Melt Butter, and Mix with Olive oil. (NOT IN FRYING PAN!! IN SEPARATE BOWL!!)
Dip Fish in Butter Oil Mixture, then dip in your spice mixture.
Depending on how much fish you have, you may want to double or triple the recipe.
Cooking time is approx. but 5 min or less on either side should do it!!
The fish should flake with a fork, and it will look burnt...But that is why it is called Pan Blackened Catfish!!
